Many of the current voices we hear about the existential pressures on the restaurant business arise because, over the past 18 months, it has become immensely difficult to see what is happening. Consequently many operators have been mesmerised by price rises coming from many directions in unforeseen ways. The result has been real pressure on fundamentals such as cash flow and profitability.
